Pistachio Varieties: Iranian vs American

Fandoghi, Akbari, Kerman — three varieties, very different markets. Which one fits your business?

Iranian Round (Fandoghi)

Fandoghi is the workhorse of the pistachio trade. It accounts for roughly 60% of Iran’s total pistachio production and is the variety most Indian wholesale buyers are familiar with. The kernels are round, compact, and naturally open-shelled.

Flavour is where Fandoghi stands out — richer and more intense than California pistachios, with a slightly earthy, resinous note that comes from the arid Iranian growing conditions. The shells are harder and the kernels smaller than long varieties, but for eating out of hand or packing into retail bags, Fandoghi delivers the taste that Indian consumers associate with ‘good pista.’

Pricing sits in the mid-range — significantly cheaper than Akbari but more expensive than California at equivalent sizes. For retail packing and snack use, Fandoghi is the default choice across most of India.

Iranian Long (Akbari & Ahmad Aghaei)

Akbari and Ahmad Aghaei are the premium Iranian varieties — elongated, large-kerneled pistachios that command the highest prices in the market. Akbari is the larger of the two, with shells that can reach 28-30mm. Ahmad Aghaei is slightly smaller but more widely available.

These are gifting pistachios. When someone opens a dry fruit box and sees long, elegant pistachios instead of round ones, they notice. For Diwali hampers, wedding gifts, and corporate gifting, long pistachios justify their premium.

The flavour profile is milder than Fandoghi — less intense, slightly sweeter. Some buyers prefer this; others find it less characterful. The real selling point is visual impact and perceived luxury.

Availability can be unpredictable due to sanctions, trade restrictions, and crop variability. If you’re building a product line around Iranian longs, maintain buffer stock. We’ve seen supply gaps of 2-3 months in difficult years.

American (California Kerman)

California produces about 50% of the world’s pistachios, almost entirely the Kerman variety. These are the pistachios you see in supermarkets globally — uniform in size, lighter in colour, and available roasted-and-salted year-round.

The key advantage is consistency. Every shipment looks the same, grades the same, and comes with USDA documentation. For food manufacturers who need predictable input — ice cream, confectionery, baklava at scale — California pistachios are the safe choice.

Flavour is milder than Iranian varieties. Buyers who grew up eating Iranian pistachios often describe California ones as ‘bland,’ but this is partly a matter of what you’re used to. Roasted and salted, the difference narrows.

Pricing has historically been comparable to Iranian round, though this fluctuates with exchange rates and trade policy. California pistachios carry no sanction risk, which matters for export-oriented buyers.

Choosing by Use Case

Retail snack packing (Indian market): Iranian Round (Fandoghi). The flavour profile matches Indian consumer expectations, and the price point works for everyday retail.

Premium gifting and hampers: Iranian Long (Akbari or Ahmad Aghaei). The visual impact justifies the premium. Order well ahead of festive seasons.

Baking and confectionery: California Kerman kernels (shelled). Consistency matters more than intense flavour when pistachios are an ingredient, not the star.

Export: Depends on the destination market. Middle East and South Asia prefer Iranian. Western markets default to California. Check import regulations — some countries restrict Iranian-origin goods.
